COMPOSTING

Sustainability is at the heart of everything we do. We’ve replaced the typical bar trash cans with compost bins, where organic waste goes to be broken down rather than sent to a landfill. In fact, we produce just one bag of trash for every 1,500 guests served, a testament to our commitment to waste reduction. Each week, we generate around 100 pounds of compost, collected by Scraps, a local composting partner that transforms our organic waste into nutrient-rich soil, helping support sustainable agriculture in our community.

Using composting instead of landfill disposal significantly reduces carbon emissions. By diverting 100 pounds of compostable waste each week, we prevent approximately 4.4 pounds of CO₂ emissions for every pound composted, which equates to about 440 pounds of carbon emissions saved weekly.

ZERO-WASTE

In addition, we employ zero-waste practices with our ingredients, using every part of fruits, vegetables, and herbs. Citrus peels become bitters and garnishes, leftover fruit pulp finds new life in syrups, and herb stems infuse our house-made mixers. Each cocktail tells a story of our dedication to the planet, with sustainability shaping every sip.

Instead of melting or discarding leftover ice, we manage our ice use carefully throughout the night, minimizing waste by planning portions in advance and repurposing as much as possible to reduce overall water consumption.

PLASTICS

Our commitment to sustainability includes eliminating single-use plastics from all our operations. We’ve replaced plastic straws, stirrers, and other disposable items with reusable, compostable, or biodegradable alternatives, ensuring every choice reflects our dedication to reducing waste.

This extend all the way to all paper products we use. We exclusively utilize BPA-free receipt paper, ensuring that our transactions are safe for both our guests and the environment. Additionally, all our menus are printed using non-hazardous dyes and inks, further reducing any potential harm to the ecosystem. By prioritizing eco-friendly materials, we not only promote a healthier atmosphere for our guests but also contribute to a more sustainable future. Every detail counts, and we strive to make choices that reflect our dedication to environmental responsibility at every level of our operation.
